For us, autumn always means apples. Apples, apples, apples. We love apples, and the apples that you can get in the Nordics during autumn are just sensational! Just perfectly sweet, while still have that freshness and tartness left in them. Luckily for us our close friends have a house a few hours out into the countryside where they grow the most amazing apples — and even more lucky for us, they love to bring us a bunch because we love them so much! So if you’ve seen more than enough apple posts on our insta and are already getting tired of apples then this is not the place for you, because here’s another great apple recipe:

 

2 dl almond flour
1 tbsp cinnamon
1/2 tsp vanilla powder
1 tsp baking powder
2 tsp psyllium husk*

2 apples

2 eggs
1 dl almond milk
1 tsp honey or agave syrup
2 tsp peanut butter
2 tbsp homemade apple sauce**
A pinch of salt

*Psyllium husk might sound like a strange ingredient, but it’s not. It’s just the peels from (for example) flax seeds and you can find it in most well-stocked stores with a gluten free shelf. In Swedish it’ll probably be called fiberhusk. It’s often used in gf-baking since most gluten free flours don’t have the same binding effects as regular wheat flour.

**Just a sauce/jam of quickly boiled and mixed apples, without any added sugar. You can use a good store-bought version of course if you prefer.

Turn the oven on 200 °C. Combine all the dry ingredients and stir well. In another bowl mix all the wet ingredients, starting with whisking the eggs and then adding the rest.

Combine the ingredients from the two bowls and let the dough sit for a while.

Chop one of the apples into cubes and fold into the mixture.

Fill your muffin tray or muffin forms with the dough, slice the other apple thinly and top the muffins with the slices, if you want them crispy you can add them from the start, if you want them a bit soft add them after 10 minutes of baking.

Bake for 18-20 min in the middle of the oven until golden brown. Enjoy on the couch with your favourite book.
