Smooth blueberry overnight oats

Breakfast food is the best, and breakfast food that doesn't require any effort is even better. We're making a bunch of different overnight oats recipes for our cookbook, and at the moment we're trying different combinations to give you the best possible recipes. While I think that it's hard to fail with overnight oats, some of them turn out just a bit better than others.

This one is a real classic in our home and one of the easiest to try if you haven't made overnight oats before. The combination of classic Scandinavian tastes makes it easy to love, while being extremely easy to prepare. We usually make a big batch for weekday mornings and even some for an afternoon snack. I've found that even though you get a lot of weird looks and questions when you pull it out of your bag, it's worth it.

2 dl rolled oats (preferably rye)
3 dl almond-milk*
1,5 dl blueberries
A pinch of authentic vanilla powder

*or vegan milk of choice

Mix all of the ingredients in a food processor or with a stick mixer until smooth.

Pour the mixture into a jar and store it in the fridge over-night (or at least for 1-2 hours).

Top with fresh berries and enjoy!
