Oven-baked porridge with pears

Breakfast food, aah the most glorious word. The word indicates time, or the fact that there is time to eat it. It indicates a slow morning with music playing, you walking around in your PJs and doing exactly what you want to do.

If you hadn't realised it yet - I'm a big fan of breakfast. I'm always hungry when I wake up so often I'm just incredibly happy to eat whatever I can get my hands on. On busy everyday mornings I don't prioritise my make up, my outfit or even packing my gym bag, I prioritise breakfast. The first taste of coffee and bite of breakfast is heaven and I wouldn't trade it for any thing in the world. Well, maybe an even fancier breakfast. 

During the last couple of years I've really started liking porridge. Which is a big deal for me, because when I was a child I used to give porridge to my dolls as a punishment.

I guess this image comes from films and tv because I can't remember my mother ever giving me porridge as a punishment. 

But now, as an adult, porridge is something I'm really happy to be served, if someone would give me porridge every time I'm bad I guess I'd be bad all the time.

If you're like me and enjoy your breakfast but at the same time you're an optimist when it comes to time, I warmly recommend that you prepare this oven-baked porridge in advance and just quickly heat it up in the morning. It will save you time and you'll have an amazing breakfast!

Feel free to be creative with the flavours, you can add whatever you fancy. For more protein I recommend you add some chia pudding into the mix. Go nuts!

  • 5 dl rolled oats

  • 1 tbsp baking powder

  • 400 ml water

  • 1 egg / or 1 dl of chia pudding for a vegan option

  • 1 tbsp cinnamon

  • 1 pinch authentic vanilla powder

  • A dash of coconut-oil/butter

  • 1/2 pear

  • Fresh berries for decoration

  1. Turn your oven on to 150°C
  2. Grease a small oven form (approx. 25cmX20cm) with some coconut oil or butter so the porridge won't stick
  3. Mix the dry ingredients together in a bowl, add the egg, and the water and stir until the mixture is even
  4. Pour the mixture into the oven form
  5. Slice the pear and place it on top of the porridge
  6. Bake for 40 minutes in the middle of the oven
  7. Top the porridge with coconut flakes and fresh berries
  8. Enjoy!
