If you haven't heard about the baked cauliflower yet, friend, you're in for a treat! This is the number one food among cool, young hipsters and we all know they can spot a trend a moustache length away. 

Ever since I went to restaurant Holiday in Helsinki in August and had their amazing Baked Cauliflower I've been thinking about it. Daily. You might think I'm kidding but I'm not, it was so good. So today we made our own version of a roasted cauliflower which is perfect as a side dish, or as a part of a larger meze serving. Enjoy it with your coolest friends and make sure to tag #roastedcauliflower in your instagram post. 1 cauliflower

0,5 dl olive oil
1 clove of garlic
A handful of fresh coriander leaves

Chop the coriander, crush the garlic in a garlic press and mix together in a bowl. Cover the cauliflower with the marinade using your hands — really try to get it in everywhere.

Bake it in the oven for 1 hour at 180°C.

Serve with some hummus — or mix tahini, peanut butter and olive oil in a bowl and use that as a dip and enjoy!
