Garlic & coriander roasted cauliflower

If you haven't heard about the baked cauliflower yet, friend, you're in for a treat! This is the number one food among cool, young hipsters and we all know they can spot a trend a moustache length away. 

Ever since I went to restaurant Holiday in Helsinki in August and had their amazing Baked Cauliflower I've been thinking about it. Daily. You might think I'm kidding but I'm not, it was so good. So today we tried to replicate the dish.

Full disclosure, this is our take on the dish, not theirs! They're pros and we're, well, we're Lotta & Anton. And if you find yourself in Helsinki you should definitely go to Holiday. While making it we had no idea how it would turn out, living la vida loca and so on. But you know what, it turned out delicious! Sometimes it's worth taking chances in life. Like all our foods - and the food philosophy we live by - we want our food to be tasty, healthy and fast, this one ticks of all of those boxes. Well the healthy one might be a bit blurry, but a snack can be a bit unhealthy. And also, it's cauliflower, how bad can it be? So lets do this!

  • 1 cauliflower


  • 0,5 dl olive oil

  • 1 clove of garlic

  • a handful of fresh coriander leaves

  • salt

  1. Chop the coriander, crush the garlic in a garlic press and mixtogether in a bowl
  2. Cover the cauliflower with the marinade, really try and rub it in everywhere using your hands
  3. Bake it in the oven for 1 hour at 180°C
  4. Serve it with some hummus, or mix tahini, peanut butter and olive oil in a bowl and use that as a dip. So so good!
