Roasted purple cauliflower salad

Everyone is talking about roasted cauliflower, and for good reason. It might be the easiest and tastiest vegetable to prepare right now. There are endless ways to eat it and today we'll present it in a salad!

Simple food really is the best, am I right? I'm personally not someone who likes to spend hours and hours preparing dinner, well, if it's not for this blog of course. But when we prepare food to be photographed we're usually not hungry, otherwise it could end badly. But, back to the topic - when you're hungry you don't want to waste any precious time on complicated recipes. This recipe is for all the heroes out there who fill your days with work, activities, workouts, chores, school, being a mom, dad, or just lounging around at home.

This is for you, it will keep you healthy, fill your tummy and it practically makes itself. Feast away!

This time we used a purple cauliflower, with no other reason then that they had it in our local store and it's really pretty. I think that's reason enough! But it tastes the same as the more common used white one, the only thing to be aware of is that the colour will fade once you cook it or boil it (especiallly if you boil it). So make sure to enjoy it before.

  • 1 cauliflower 

  • 1/2 grapefruit

  • 50 grams of feta cheese

  • 1 avocado

  • 4 dates 

  • a handful of salad leaves

  • a clove of garlic

  • olive oil & salt

  • basil for garnish

  1. Start by turning your oven on to 200 'C, separate the cauliflowers from each other and pour some olive oil and salt on top of them. Chop one garlic and mix it on top of it. 
  2. Bake it in the oven for 30 minutes. 
  3. While the cauliflower is baking, prepare your salad. Chop the avocado, grape fruit, dates and feta cheese. Add it on top of a salad mix. 
  4. When the cauliflower is done, enjoy it with a nice tv-show and a dog or cat in your lap!
