Have you ever met a person who doesn't love chocolate muffins? Well if you have, stop being friends with them immediately. Chocolate muffins will be there for you when all your friends cancel, when your girl/boyfriend dumps you, when your cat does't want to sit in your lap. And these are made without sugar - so you don't even have to feel guilty when you eat them!
I've been home from work this week, because I work as a freelancer and sometimes you get a few days off in between jobs. It's been so nice to be home without having to do anything other than exactly what I feel like.
So I've caught up on a lot of tv-shows, made lots of avocado sandwiches, and relaxed on my yoga mat. Sounds like a made up instagram post does it? Well, I've actually done it, believe me! But sadly for me, it's over now. Back to work.
Now if there is one piece of advice I can give you, or two now that I have your attention, it is to practice yoga.
I was a super stressed person last spring, so stressed that it actually made me sick, and I was desperate to find a cure. I was looking for a meditation class when I found a yoga studio on our very own street. I tried it and immediately knew that this was the medicine I've been searching for. My yoga school is warm, welcoming and helpful. The teachers not only teach me how to do yoga, but they also teach me to be present, listen to myself, relax and slow down. And naturally so much more, but I don't want to bore you. But what I can say, is that if you feel that your head is spinning and you can't breathe, try yoga.
My second piece of advice is to eat desserts. Because it really does help, especially any and all desserts that are filled with chocolate. Chocolate is proven to soothe us, it has a lot of anti-imflammatory benefits, antioxidants, it can lower your blood pressure and save the worlds economy. That last one might not be true, but one thing you can't argue with is the fact that it's yummy and will make you happy!
(Ps. Make sure the chocolate you buy is fair-trade certified!)
1 tbsp coconut oil
1 tbsp plant-based yoghurt
2 tsp honey
2 dl graham flour
1 tbsp cocoa powder
50g dark chocolate (use one that is at least 70% cocoa)
a pinch of authentic vanilla powder
- Turn your oven on to 200°C
- Whisk the eggs in a separate bowl until fluffy, then add the rest of the wet ingredients and blend until even
- Chop the chocolate into large chunks and blend together with the rest of the dry ingredients (save a few small pieces for later!)
- Combine both the dry and wet ingredients and pour into a muffin baking tray or into muffin forms
- Bake in the oven at 200°C for 10min
- Take the muffins out and add the rest of the chopped chocolate on top of the muffins, then bake for 10min more
- Take them out and let them cool for 5min
- Enjoy with a cold glass of plant-based milk!
It's been a hectic autumn for both of us, after starting this blog we've really given it all of our time and all of our love.
But so far we haven't regretted it for one second, actually we often speak of how incredibly happy we are to have started it. It has given us a lot of perspective, challenged us creatively and made us grow every day.
