Pineapple & lingonberry smoothie

We love beets, potatoes and apples as much as the next Scandinavian person. But at some point during autumn we just have to throw in a bit of fruit from warmer latitudes into the mix. This the perfect recipe for just those occasions.
We actually made this beatiful smoothie on a whim after we'd gotten a pineapple from Lottas sister and happened to have a strong urge for a smoothie at the same time. It has a really nice mix between the sweetness of the pineapple and banana and the sourness of the lingonberry. We made the smoothie into layers, which really let's the colours shine, but you can mix everything together straight away if you want to make it easier for you. But trust me when I say that it's worth making it into layers -- I mean, look at it! It's gorgeous
So here you go, a quick and simple pick-me-up for those gloomy October mornings or evenings (or afternoons!). We were really happy with how good this recipe turned out to be and are already looking forward to the next time we have a perfectly ripe pineapple on our hands.
If you have one lying around you're welcome to bring it to us, we'll supply the lingonberries and then we'll have a smoothie party! (Disclaimer: This might, in fact, be slightly weird and/or awkward if we don't know each other, so be prepared for that).

A 5cm thick slice of pineapple (approx. 180g)
The juice from one large orange
1 dl lingonberries
1 dl yoghurt (we use Oatly's oat-ghurt)
- Cut the pineapple slice into big chunks and throw it into a blender, along with the banana and the freshly squeezed juice from one orange, and blend until smooth
- In a separate bowl (or the same blender after a quick rinse) mix the lingonberries with the yoghurt until smooth
- Scoop the crushed lingonberry and yoghurt mixture into two glasses and carefully pour the pineapple & banana mixture on top
- Serve immediately, with a huge smile on your face!
